This Steakhouse Has Its Own Wine Club, According to Rich Report

The pandemic has hit a number of restaurants hard, but those restaurants that have managed to face it with a business acumen have managed to stay afloat during this difficult time. Cote, the Korean steakhouse run by restaurateur Simon Kim, is one of those restaurants that has survived. The Michelin-starred Cote, which opened in New York in 2017, has rapidly transitioned to takeout as well as bringing its famed Butcher’s Feast to its customers across the country via Goldbelly.
With the recent expansion of the Kim and Co. company to Miami, the company is now extending its celebrated wine program across the country as well.

In addition to the restaurant's acclaimed wine team, which is led by sommeliers Victoria James and Mia Van de Water, the restaurant is also embracing innovation. A few months back, they launched a new wine club where you could sign up for $165 a month for three bottles, access to tastings at Cote Wine Club, Zoom happy hour with the winemakers and a discount of 10% on additional bottles purchased from Cote or its wine club partner Convive. Providing a broad selection of bottles from winemakers committed to organic, biodynamic, sustainable and 'la lutte raisonée' winemaking practices, James and Van de Water curate a collection of bottles from these producers.
As part of the club's September shipment, three delicious bottles were included, along with a little booklet that provided their backstory, pairing guide, and even a recipe for the drinks. Firstly, I chose the Corbon Blanc de Blancs Brut Avize Grand Cru Champagne, a grower-Champagne that had lemon notes that worked well with seafood. Second, I chose the rosé of Bandol, which is one of the great Rosé producing regions in France.
A combination of Mourvedre, Grenache and Cinsault, the Domaine de Terrebrune Rosé, Bandol is created in a blend of 50 percent Mourvedre, 25 percent Grenache, and 25 percent Cinsault. A recipe for spaghetti and bottarga can be found in the winemaker's website. A bold and structured Southern Italian red is also offered by the Salvatore Molettieri Vigna Cinque Querce, Taurasi, which hails from Campania.
