An interesting technique - fat washing - is used in this recipe for a unique take on cocktails.

It might not be appetizing at first glance, but fat washing is one of our favorite bartending techniques, used in some of the world's best bars. It involves melting a type of fat (oil, butter or bacon fat), mixing it with spirits, then freezing the mixture once it has been mixed. 

It is then removed from the mixture after it has frozen and solidified, leaving an infusion of fat in the spirit resulting in a liquid that has a distinct taste of the fat that was used in the preparation.

Dewar's 12 Year Old is fat-washed with truffle butter in this recipe; an incredible combination to try. A double-aged blend of Dewar's Scotch whiskey is a direct descendant of the brand's signature blended Scotch whiskey, which was introduced more than a century ago. There are delectable notes of honey, vanilla, citrus, and truffle butter in the whiskey; the truffle butter fatwashing adds a smooth taste of savory earthiness to the whiskey. 

The best thing you can do is prepare the whiskey ahead of time since you will need to take into account how long it will take to do the fat washing. It is also important to note that the fat-washing with meat or dairy products will last for around two weeks (fat-washing with oil can last for about four weeks). Despite the fact that it takes a bit of time to prepare, the Truffle Old Fashioned is utterly delicious and utterly moreish. 

In a bar in New York called Katana Kitten, head bartender Masa Uruishio, came up with a recipe for this drink.


2 parts Truffle Butter Fat-Washed Dewar’s 12 Year Old Scotch Whisky

.25 part Porcini-shiitake broth sugar

3 dashes Scrappy’s Chocolate Bitters

1 drop 5% truffle salt saline


In a cocktail shaker, combine all the ingredients with some ice and shake vigorously. Strain the mixture into a double rocks glass filled with fresh ice, garnished with fresh shaved white truffles, and serve immediately.
