Modern New England Cuisine at the Intimate New Brooklyn Tasting Menu Restaurant

End of August is the opening date for Pearl Street Supper Club.
A chef honing his craft under masters of New Nordic cuisine is getting ready to explore New New England cuisine.
It is expected that Chris Cote will open Pearl Street Supper Club in Dumbo, Brooklyn this month, a tasting counter with 10 seats. He will serve diners his own take on modern New England cuisine, after previously working at Michelin-starred Aska and Noma. From the lakes, forests, beaches, and backyard gardens he grew up with in Connecticut, he will take inspiration for his menu.

This means a nine-course seafood and vegetable menu for $125. The menu will change regularly, depending on the season, but to start out, Pearl Street is serving a chill-oyster and tomato dish, which will live up to its name. Live surf clams and scallops will be served for snacks.
He particularly enjoys bluefish stewed with buttermilk whey and asparagus, accompanied by a fruit and basil salad, cauliflower purée, and a buttermilk whey sauce.

A five-glass beverage pairing will be available for $75 in the future, when Pearl Street is granted its liquor license.
There will be three seatings on Fridays and Saturdays, and two seatings on Wednesdays and Thursdays at Pearl Street Supper Club.
